Guacamole Fried Egg on Toast


One of my lunch buddies told me about this recipe. This is a popular breakfast item in Columbia. Given I’m a huge fan of fried egg, I jumped at this idea and made my version right away. To make it cute and a bite-size food, I used quail egg instead. These would be great as Hors d’oeuvre for a party.


Honey Wheat Bread 1 piece

Avocado 1

Parsley Minced 1/3 cup

fried garlic bits 1 table-spoon

Juice of 1 small lime

Cherry tomato 1

Sugar 1 tea-spoon

Cumin powder 1 tea-spoon

Sweet paprika 1 tea-spoon

Salt and Pepper to taste

Quail eggs 3



1. Scoop out the Avocado flesh into a bowl, add in the parsley, garlic, paprika, cumin, sugar, lime juice, salt and pepper. Mash them well. 

2. Toast the bread in a toaster for 3-4 minutes. Cut the bread into 3 rectangular shapes.

3. In a small non-stick pan, add 2 tea-spoons of olive oil, heat up for 1 minute before crack the eggs. Fry the eggs sunny side up for about 3-5 minutes until the bottom is golden brown

4. Spread each of the mini toast with the guacamole, one slice of the tomato then top with one fried quail egg. Be creative with decoration!
